Italian Pesto Recipe

If you have tasted pesto sauces from Italy, you would surely classify other country?s best efforts to create Italian pesto recipes as junk. Yes, and THAT is an understatement.

Genoa is the epicenter of pesto-making in Italy. Beautiful pesto should be handmade and should taste light and perfect. The pesto available in the rest of the world is made with the use of a machine, a blender, or a food processor. The word ?homemade? is not equal to ?handmade.? If the ingredients for the pesto recipe are not chopped by hand, the consistency will be just smooth, as you would observe in a paste, rather than a full and rich texture in between the basil and the nuts.

In essence, the best Italian pesto recipe is mainly a result of hand chopping the ingredients rather than using a machine. instead of the basil leaves blending in with the oil in a homogenized paste, it will separate from the oil and create a texture that is pesto-perfect!
